Now on to that recipe I promised! This is a really old recipe, Almond Chicken with Mushrooms, but recently I got the idea of cooking it in a crockpot. So much simpler!
Got a crockpot? Get it out and spray the inside with cooking spray.
Ok, now collect these ingredients:
6 chicken boneless, skinless chicken breasts
12 slices bacon
1 pack thinly sliced deli roast beef
8 oz. sour cream
2 cans cream of mushroom soup
8 oz. sliced mushrooms
1 c. sliced almonds
Wrap each chicken breast with the slices of roast beef and then wrap the beef covered chicken with 2 slices bacon. Place these in the crock pot.
Drain the mushrooms and pour them over the top of the chicken.
In a separate bowl, mix together the soup and sour cream. Spread that over the chicken.
Now sprinkle the top with the sliced almonds.
Turn the crockpot on and either cook on low for about 8 hours or on high for about 6 hours. Crockpots vary, so cooking times depend on your crockpot. Cook until chicken is completely cooked and tender. Serve with rice.
Try it and let me know what you think!
